
Ingredients
1 sheet of puff pastry
1 egg, beaten
118 g goat cheese, crumbled
2 tbsp olive oil
1 garlic clove
1 tbsp honey
1 lemon, zest & juice
6 asparagus spears
Balsamic glaze, for garnish
Microgreens, for garnish
Salt, to taste
Instructions
Step 1
Preheat the oven to 400F. Line a rimmed baking sheet with parchment paper. Gently roll the puff pastry out on the prepared baking sheet, smoothing out the folds and bumps. Lightly mark a 1-inch border with a knife and brush it with egg wash. Inside the border poke several small holes with a fork.
Step 2
Remove the woody ends of the asparagus and slice in half lengthwise.
Step 3
Make the whipped goat cheese. In the bowl of a food processor add soft goat cheese, olive oil, garlic, honey and lemon juice. Blend until all ingredients are well incorporated, 2-3 mins.
Step 4
Using a spoon spread the goat cheese inside the border of the puff pastry. Arrange the sliced asparagus, and brush with olive oil. Sprinkle about a teaspoon of lemon zest and season with salt to taste.
Step 5
Bake in the oven for 40 mins until the pastry is puffed and golden. Garnish with balsamic vinegar glaze and microgreens. Serve and enjoy!
