Bacon & Leek Quiche

Ingredients

  • 1 leek, sliced

  • 1 clove garlic, minced

  • 2 slices of bacon, sliced

  • 4 large eggs

  • 300 ml heavy cream

  • 40 g gruyere cheese, grated

  • 1 tsp thyme

  • 1/2 tbsp olive oil

  • Salt & pepper, to taste

  • Pie crust, par-baked

Instructions

Step 1

Preheat oven to 375F.


Step 2

In a pan pre-cook bacon on medium heat for 10 minutes until golden. Remove and set aside. Add leek, garlic, salt and pepper and cook on medium heat for 7 minutes until caramelized. Set aside to cool.


Step 3

Prepare your custard. In a large bowl whisk eggs, cream, thyme, salt, and pepper. Gently fold in half the cheese.


Step 4

In a par-baked pie crust add cooked leeks and bacon bits. Pour over custard and top with remaining cheese.


Step 5

Bake for 30 minutes until golden and set. Allow to cool for 15 mins, serve and enjoy!
