Cinnamon Swirl Banana Bread

Ingredients

  • 1 cup butter, melted

  • 1 cup sugar

  • 2 large eggs

  • 1 tsp vanilla

  • 2 cups flour

  • 1 tsp baking soda

  • 1 1/2 cups mashed ripe banana


    For the swirl:

  • 3 tbsp butter, melted

  • 3 tbsp sugar

  • 3 tbsp brown sugar

  • 2 tbsp cinnamon

Instructions

Step 1

Preheat the oven to 350°F. Lightly grease and flour a 9×5-inch loaf pan and set aside.


Step 2

In a large bowl, add the melted butter. Whisk in the sugar, eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until just combined.


Step 3

Make the swirl. In a small bowl, add the butter, sugars, and cinnamon. Use a fork to mix the cinnamon sugar swirl ingredients until thick and well combined.


Step 4

Add 1 cup of the batter to the prepared pan. Dollop 1 tbsp of the cinnamon sugar mixture over the batter in the pan and then make a swirl through the batter with a table knife. Repeat layers until done. 


Step 5

Place the loaf pan on a baking sheet in the middle rack of the oven and bake for 60 minutes until golden brown and a toothpick inserted in the center comes out clean. Let the bread cool for 10 minutes before removing from the pan.
