French Apple Cake

Ingredients

  • 2 1/2 pounds of apples*

  • Juice of half a lemon

  • 3 large eggs

  • 2 tablespoons unsalted butter, melted

  • 1/2 cup milk + 2 tbsp more for icing

  • 2/3 cup granulated sugar

  • 3/4 teaspoon kosher salt

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1/2 cup powdered sugar

Instructions


Step 1

Preheat the oven to 350°F. Butter a cake tin and dust with flour to prevent sticking


Step 2

Peel, core and slice the apples very thin. Place the cut apples in a large bowl with lemon juice to prevent browning.


Step 3

In a large bowl, add eggs, butter, milk, sugar, salt and vanilla. Mix until well combined. Add flour and mix until smooth. Step 4

Add the apples and gently fold until the apples are well coated. Using your hands, arrange the drenched apple slices into your cake tin and pour any remaining batter over the top.


Step 5

Bake for 60 minutes or until a toothpick inserted in the center comes out clean.


Step 6

In the meantime, make the glaze by whisking together 1/2 cup of powdered sugar and 2-3 tbsp of milk.


Step 7

Allow the cake to cool at room temperature for 10 minutes before flipping it to remove it from the pan.


Step 8

Drizzle with glaze, serve and enjoy!

I used Macintosh apples for this recipe, Granny Smith would also work well.
