Fresh Apple Cake

Ingredients

  • 3 apples

  • 1 tbsp lemon juice

  • 2 eggs

  • 150g sugar

  • 1 tsp vanilla

  • 75g melted butter

  • 150g flour

  • 1 tsp baking powder

  • Pinch salt

  • 1 tsp cinnamon

  • 1 tbsp powdered sugar

Instructions

Step 1

Preheat the oven to 350F. Grease the baking pan and lightly dust with flour. 


Step 2

Peel, core, and thinly slice your apples. Set aside with a bit of lemon juice.


Step 3

Whisk eggs in a bowl, add sugar and mix. Add vanilla and butter and mix. Sift in flour, baking powder, salt and cinnamon. Gently mix until just combined. Add apples to the batter. Carefully fold the batter and apples until mostly coated. Add the batter to the baking pan.


Step 4

Bake for 45 minutes. Test with a toothpick.


Step 5

Allow to cool before lightly dusting with powdered sugar.  Serve and enjoy!


Note: This dish is best enjoyed fresh with a scoop of vanilla ice cream.
