Ginger Molasses Cookies

Ingredients

  • 1 cup brown sugar

  • 3/4 cup unsalted butter, softened

  • 1/4 cup molasses

  • 1 large egg

  • 2 1/4 cup flour

  • 2 tsp baking soda

  • 1/4 tsp salt

  • 1 1/4 tsp ginger

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

Instructions

Step 1

Preheat the oven to 375F. Line two baking sheets with parchment paper.


Step 2

Using a stand or hand mixer on high speed cream together the brown sugar and butter 3-4 mins. Stream in the molasses, and add the egg. Mix until combined.


Step 3

Sift in the flour, salt, baking powder and spices. Mix on low speed just until combined.


Step 4

Scoop 1/4 cup of dough, gently roll into a ball, toss in a small bowl of granulated sugar, set aside on the baking sheet. Repeat this process until there is no more dough. Lightly press down the dough and place in the refrigerator for 10 mins before baking.


Step 5

Bake in the preheated oven for 12 mins. Allow cookies to cool before handling.

Note: Make ahead and freeze in a resealable bag for up to 1 month.
