Ingredients
1 rutabaga, peeled and chopped
1/2 celery root, peeled and chopped
1 1/2 cups vegetable broth
1/4 cup cream
Salt, to taste
Pepper, to taste
Bacon, sliced
Chives, minced
Instructions
Step 1
In a large pot, cook chopped bacon over medium heat for 4-5 mins on each side until crispy. Set aside.
Step 2
Add onion and cook until soft, 3 mins. Add rutabaga and celeriac and cook for 10 mins, stirring occasionally.
Step 3
Add broth and bring to a gentle simmer. cover and reduce heat to low. Let simmer for 20 mins until vegetables are tender.
Step 4
Transfer to a blender and puree until smooth. Stir in cream, and season to taste with salt and pepper.
Step 5
Serve hot and load with cheese, bacon and chives. Enjoy!
