
Ingredients
1 ½ cups pumpkin puree
½ cup brown sugar
½ cup caster sugar
2 eggs
½ cup coconut oil
1 tsp vanilla
2 cup flour
1 ½ tsp pumpkin spice
½ tsp cinnamon
1 tsp baking powder
¾ tsp baking soda
½ tsp salt

for the filling:
113 g cream cheese
2 tbsp sugar
1 tsp flour
½ tsp vanilla
2 tsp milk
Instructions
Step 1
Preheat the oven to 425F.
Step 2
In a large bowl combine pumpkin and sugars. Add eggs one at a time, mixing between each addition. Add milk and vanilla and mix until smooth.
Step 3
Sift in flour, spices, baking powder, baking soda, and salt. Fold until just incorporated.
Step 4
Make the filling In a stand mixer beat cream cheese, sugar, flour, vanilla and milk until smooth.
Step 5
Divide the batter evenly in the muffin tray. Add a tablespoon of cream cheese filling on top and sprinkle with pumpkin seeds. Bake for 5 mins, then reduce temperature to 350F. Bake for 15 mins. Cool completely, serve and enjoy!
