
Ingredients
1 1/4 cups flour
2 tbsp brown sugar
2 tsp baking powder
1/4 tsp salt
1.5 tsp pumpkin pie seasoning*
1 cup buttermilk*
1/2 cup pumpkin puree
1 large egg
2 tbsp melted butter
1 tsp vanilla extra
Maple syrup for serving
Instructions
Step 1
Whisk together buttermilk, egg, pumpkin, melted butter, and vanilla extract in a large bowl.
Step 2
Add brown sugar, baking powder, salt, and pumpkin pie seasoning. Sift in flour and mix until just combined.
Step 3
In a pan on medium heat, add just enough butter to grease. Pour ⅓ cup of batter and let it cook until bubbles begin to form. Flip and cook for an additional 2-3 minutes.
Step 4
Add finished pancakes to the preheated oven to keep warm.
Step 5
Serve the pumpkin pancakes with maple syrup and enjoy!
Note: Substitute buttermilk by combining 1 cup of milk and 1 tsp of apple cider vinegar and letting it rest for 10 minutes. Make your own pumpkin pie seasoning with 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger, and ⅛ tsp cloves.
