Pumpkin Spice Granola

Ingredients

  • 3 cups rolled oats

  • 1/2 cup pumpkin seeds

  • 1/2 cup pecans, chopped

  • 1/2 cup sultana raisins

  • 1/2 cup pumpkin puree

  • 1/2 cup coconut oil

  • 1/2 cup maple syrup

  • 1 tsp salt

  • 1 tsp cinnamon


Instructions

Step 1

Preheat the oven to 350F. 


Step 2

In a bowl combine pumpkin, coconut oil, maple syrup, salt and cinnamon. Add the oats, nuts, and raisins until incorporated.


Step 3

On a baking sheet lined with parchment paper spread the mixture. 


Step 4

Bake for 30 mins, flipping halfway through.


Step 5

Remove from the oven. Allow to cool, crumble, and enjoy!



Note: This can be stored in a container for up to 2 weeks.
