
Ingredients
Roasted Carrots:
5-6 large carrots
3 tbsp olive oil
1/2 tsp thyme
1/4 tsp turmeric
1 tbsp honey
1 tbsp lemon zest
1 tbsp fresh parsley
salt & pepper, to taste
Whipped Feta:
3/4 cup Greek yogurt
8 oz feta
2 tsp lemon zest
1/2 lemon, juiced
1 garlic clove
1 tbsp honey
1/4 cup olive oil
salt & pepper, to taste
Instructions
Step 1
Preheat the oven to 425°f. Prepare a large baking sheet with parchment paper.
Step 2
Cut the carrots lengthwise in half. In a large bowl, add olive oil, thyme, salt and pepper. Toss the carrots in the oil. Spread the carrots on a sheet pan, flat side down. Cover lightly with foil and bake for 20 minutes.
Step 3
In the meantime, in the bowl of a food processor, add all of the whipped feta ingredients and blend until smooth.
Step 4
Remove foil and turn carrots. In a small bowl, mix turmeric and honey. Add glaze to carrots. Return to the oven and roast uncovered for 5 minutes.
Step 5
Serve roasted carrots on a plate with whipped feta and top with crumbled feta, lemon zest and parsley.
