Smoky Mac & Cheese

Ingredients

  • 225g sharp cheddar, shredded

  • 125g smoked gouda, shredded

  • 100g cheese curds

  • 250g pasta

  • 2 tbsp butter 

  • 2 tbsp flour

  • 2 cups milk

  • ½ tsp paprika

  • ½ tsp garlic powder

  • 1 tsp hot sauce

  • â…“ cup panko

  • salt and pepper, to taste

Instructions

Step 1 

Preheat the oven to 350F.


Step 2

Boil pasta for 3 minutes less than the package instructions. 


Step 3

In a saucepan over medium heat, add butter and stir until melted. Reduce heat to low. Whisk in flour, 1 tbsp at a time, and cook for 2 mins, whisking constantly. 


Step 4

Slowly add milk ¼ cups at a time and cook, whisking constantly. Add sharp cheddar and gouda one handful at a time, stirring between additions. Add garlic powder, paprika, hot sauce, salt, and pepper to taste. Add pasta and mix until fully incorporated.


Step 5

Pour in an oven-safe dish. Top with cheese curds, and finish with a sprinkle of panko. Bake for 25 mins and finish on broil for 5 mins. Serve warm and enjoy!


Note: This is an excellent dish to pair with pan-fried delicata squash.
