
Ingredients
225g sharp cheddar, shredded
125g smoked gouda, shredded
100g cheese curds
250g pasta
2 tbsp butterÂ
2 tbsp flour
2 cups milk
½ tsp paprika
½ tsp garlic powder
1 tsp hot sauce

salt and pepper, to taste

Preheat the oven to 350F.
Step 2
Boil pasta for 3 minutes less than the package instructions.Â
Step 3
In a saucepan over medium heat, add butter and stir until melted. Reduce heat to low. Whisk in flour, 1 tbsp at a time, and cook for 2 mins, whisking constantly.Â
Step 4
Slowly add milk ¼ cups at a time and cook, whisking constantly. Add sharp cheddar and gouda one handful at a time, stirring between additions. Add garlic powder, paprika, hot sauce, salt, and pepper to taste. Add pasta and mix until fully incorporated.
Step 5
Pour in an oven-safe dish. Top with cheese curds, and finish with a sprinkle of panko. Bake for 25 mins and finish on broil for 5 mins. Serve warm and enjoy!
Note: This is an excellent dish to pair with pan-fried delicata squash.
