
Ingredients
3 small cucumbers
1 tsp salt
3 garlic cloves, minced
1 tsp lemon juice
1 tbsp extra virgin olive oil
750g plain Greek yogurt
¼ cup fresh dill, chopped
¼ cup fresh mint, chopped
black pepper, to taste
Instructions
Step 1
Halve the cucumbers lengthwise. Using a spoon, remove and discard the seeds.
Step 2
Grate the cucumbers. Using a cheesecloth or a double layer of paper towel, squeeze excess liquid from the grated cucumbers.
Step 3
Add garlic, salt, lemon juice, and extra virgin olive oil to a bowl, and mix to combine.
Step 4
Add the grated cucumber to the mixture. Stir in the yogurt, a pinch of black pepper, and the fresh herbs.
Step 5
Cover and refrigerate for a minimum of 30 minutes. Serve and enjoy!
Note: You can make this recipe ahead of time, and it will keep in the fridge for up to 4 days.
