Zucchini Ravioli

Ingredients

  • 2 zucchinis

  • 1 cup marinara sauce

  • 1 cup ricotta

  • 1 egg

  • 1/4 cup parmesan

  • 2 tablespoons basil chopped

  • 1/4 cup panko

  • 3/4 cup mozzarella cheese

  • 1 cup marinara

Instructions

Step 1

Preheat oven to 425F.


Step 2

Cut off the stalk of the zucchini. Use a Y-shaped vegetable peeler to peel thin slices of zucchini. Lay them out on a paper towel and sprinkle with salt. Set aside for 10 minutes and dab off any extra moisture with a towel.


Step 3

In a large bowl, add the drained ricotta, egg, parmesan cheese, basil, salt and pepper. Mix to combine and create the filling.


Step 4

Using 2 slices of zucchini create a cross, placing one onto of the other in opposite directions.. Place 1 tablespoon of ricotta mixture in the middle. Fold each side in on itself to create ravioli.


Step 5

 Place a thin layer of marinara sauce on the bottom of a baking dish. Add ravioli seam side down to the baking dish. Add another layer of marinara, sprinkle with panko, and finish with mozzarella.


Step 6

Bake for 20 minutes. Broil for 3 minutes. Serve and enjoy!
